A small bean with green skin and yellow flesh. It's used to grow mung bean sprouts, which are used in soups and stir fried dishes. It's also ground into flour, which is used to make Chinese vermicelli noodles as well as a sweet paste used as a pastry filling. Mung beans are also boiled to make a bean soup, usually sweetened with sugar.
